Coleslaw Even A Coleslaw Hater Would Love

It’s time for a Memorial Day picnic and you need something easy to make- well check it out! Growing up I never liked coleslaw.  I’m not sure if it was the taste or texture…I’m pretty sure it was a combo of the two.  Despite this, I’ve cobbled together a recipe that not only I enjoy, but others love ❤  It’s a simple, fresh dish just in time for summer.  Plus it has a little something special in it to make it stand out from the crowd!

Ingredients:

4-6 cups of bagged coleslaw

4-6 cups of angel hair coleslaw

1 cup of mayonnaise

1/4 cup white wine vinegar

1 teaspoon celery seed

1/4 cup sugar

Splash of white peach balsamic vinegar – if you don’t have this on hand, you can make the recipe without it and it is still fabulous!

  1. Pour bagged coleslaw into bowl.  Shake bowl so super chunky pieces come to the top and remove those.  Add in angel hair coleslaw.  I like to have a 50/50 mix of each type.
  2. Combine mayo, white wine vinegar, celery seed, and sugar in a mixing bowl.  Pour mixture on top of coleslaw and mix.
  3. Pour white peach balsamic vinegar into coleslaw to taste.  I usually do a few swirls until I feel it tastes just right.
  4. Enjoy!!!!

Happy tip – My white peach balsamic vinegar is from Zi Olive and it is the best!  They do only have a few locations but they also ship.   Or you can wait until your awesome friends or family can pick you up a bottle when they are traveling 😉

And if you are in charge of making a dessert this holiday weekend, don’t forget you can always put together this goodie.  Add in blueberries and now you’ve got a patriotic touch!
